Our Just Desserts

It's rude to start dinner with dessert, I suspect -- so I think we'll be galloping through the hamburger soup, tonight.

In addition to the buttermilk biscuits (recipe from The Bakers Manual), we're having Warm Apple Pockets. The original recipe is on the Allrecipes site, found here. This is my slightly modified version -

Two Warm Apple Pockets

INGREDIENTS
* 2 sweet apples -- peeled, cored and thinly sliced
* 2 tablespoons sugar
* 2 tablespoons flour
* pinch of salt
* 1 teaspoon apple pie spice
or - -----* 1/2 teaspoon ground cinnamon
----------* 1/4 teaspoons ground nutmeg
----------* 1/8 teaspoon ground allspice
----------* 1/8 teaspoon ground cardamom
* 1 tablespoon vanilla extract
* 2 prepared, unbaked pie crusts (thawed if necessary)
* milk
* 1 egg, beaten

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a bowl, toss apple slices together with sugar, flour, salt, apple pie spice, and vanilla extract until evenly coated.
3. Lay pie dough flat on a lightly greased baking sheet.
4. Pile apples on one side of dough, leaving a 1 inch border.
5. Brush opposite half side of dough and entire border with milk.
6. Fold dough over apples, being careful not to over-stuff or the dough will tear.
7. Fold over edges and pinch together to seal.
8. Cut several small slits in the top of the pocket with a sharp knife
9. Brush top with beaten egg.
10. Bake in the preheated oven for 40 minutes, or until flakey and golden brown.
