Here's the Choux recipe (found on the Baking Bites site), and result:
Choux Pastry
1/4 cup milk
1/4 cup water
3 1/2 tbsp butter (1.75 ounces), melted
1 1/2 tsp sugar
1/2 tsp salt
3/4 cup flour
2 eggs
1 egg yolk + 1 tbsp water (for egg wash)
1. Heat oven to 400F.
2. Combine milk, water, butter, sugar and salt in a small saucepan and bring to a boil over medium heat.
3. Add the flour all at once, stirring vigorously until dough comes together in a ball.
4. Continue to cook and stir for one additional minute.
5. Transfer dough to mixer or clean bowl and let mix at a low speed for 2 minutes until slightly cooled.
6. Add eggs one at a time, waiting until each egg is fully incorporated to add the next one.
7. Increase mixer speed to make batter smooth.
8. Using a spoon, drop 8 heaping tablespoonfuls onto a lined baking sheet.
9. If there is batter leftover, evenly distribute it.
10. Lightly stir together egg yolk and water to creat an egg wash.
11. Brush pastry with egg wash.
12. Bake for 40 minutes, until well browned and dry.
Set aside to cool completely.
I think that next time, I'll try to make the soft dough rounder.....
