This evening, my wife recalled that at some point during the Christmas vacation, my daughter had asked that we make a hot cranberry salad which we'd had a couple of years ago. As it turns out, a blog search shows that I posted the recipe at that time, but it's worth repeating. As my daughter pointed it, it's more a dessert than a salad -- but somehow, I don't think that's much of a problem.
Hot Cranberry Salad
3 cups chopped apples (McIntosh)
2 cups whole raw cranberries
1 1/2 tsp. Lemon Juice
1 1/2 cup sugar
1 1/3 cup quick cooking oatmeal
1 cup chopped pecans
1/3 c brown sugar
1 stick melted butter
Spray 2 qt. Casserole with Pam cooking spray.
Toss together apples and cranberries.
Sprinkle with sugar and lemon juice.
Place in casserole dish.
In medium bowl blend to moisten - oatmeal, nuts, brown sugar and melted butter.
Pour mixture over fruit.
Bake at 325 for 1 1/4 hour.

It really is delightful stuff -- the tartness of the cranberries and apples against the sweetness of the sugars, and crunchy from the oatmeal, pecans, and nuts. Its like a decadent granola.
Its easy to make, too... particularly if you lie in bed surfing the net while your partner and offspring do the heavy lifting (g)
