Baking Tip

When putting dough into a large bowl to rise, don't put it into a plastic bowl if you're intending to put it into the oven that's been preheated but then turned off. The racks will carve their signatures into the base of the bowl quite nicely.

On the other hand, you can then smugly say that you meant to do that, so as to keep the bowl from skittering around on the rack. Yeah, that's the ticket.
