The pudding had its pluses and minuses. On the upside, it had a nice, smoky flavor, with a layered undertaste -- it wasn't like a jolt of chocolate to the brain. On the downside, it wasn't as liquid as I'd like -- more like a very soft, very smooth frosting. The liquid in the recipe comes from coconut milk, which would be difficult to increase easily, but possibly a splash of milk would help. We did find that adding a generous dollop of whipped cream loosened it right up, making it less something to carve and more something to spoon. So, not bad -- I think its a keeper.
I'm making this. Today. afterschool snack.
ReplyDeleteIt's a pretty quick recipe. I screwed up a bit on the simmering, turning it all the way off, and then back on, which might account for why it was so firm. Good luck.
